Why fat?


Well, if one accepts the need to drop carbs very low (I net about 30 per day), one has three other choices for calories: Fat, Protein, and Alcohol


Alcohol: It might be fun, but not a healthy choice, and sometimes one's nose gets big, or the liver falls out.


Protein: Muscle builders have a record of high protein use. Some sources tell scary stories about high protein causing stress to the kidneys. My most important concern might be that excess protein is converted to GLUCOSE.


Fat: Fats and cholesterol have been opposed by the medical establishment for a few decades now. If one reviews the webpages in this Links section, you can find opinions supporting fat and cholesterol as important nutrients. Also, one can find opinions suggesting that the science behind the anti-cholesterol scare is questionable. Often these ideas come from doctors based outside the US. If one looks at absolute risk, rather than relative risk, in the worst case, where fats turned out in reality to be bad, one might increase one's risk by only a few percent. Also, if one does not focus on heart disease, but rather looks at statistics for survival/death from all causes, fat does not look so bad. If one compares the extraordinary risks of diabetes to the risks which fats *might* represent, the choice of fat makes sense.
